Spanish Tapas - Fried Chorizo

Ingredients :
4 chorizo sausages
dash of olive oil
3 gloves garlic - crushed
quarter cup of chopped fresh parsley

.... and for a difference
2 tablespoons of honey
2 tablespoons of white wine vinegar

Cut the sausages into 5mm slices and cook in a large heated frying pan to which the dash of olive oil has been added.  Stir until crisp and then drain on some kitchen paper and drain off the oil from the pan. Return the slices to the pan to re-heat with the garlic and parsley until heated through.

As an alternative, when returning the chorizo to the pan to re-heat, add the honey and white wine vinegar and  stir until the honey and vinegar covers the chorizo.


Serve the slices warm with some crusty bread and, of course, a nice glass of rioja !
